One thing we really miss on this diet is dessert. Pumpkin is a vegetable, so you can have this pie on a protein-vegetable day. Top it with some diet cool whip and it is a great diet dessert! We are planning to cheat on Thanksgiving, but we like this pie so much we are still going to have this one.

Dukan Pumpkin Pie

15oz can pure pumpkin
12oz can evaporated milk
2 eggs
1/3 cup Splenda brown sugar
1 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves

Crust
1 cup finely ground oat bran
1/4 cup skim milk

1. Preheat oven to 425*F. Spray pie pan with non-stick cooking spray.

2. Combine oat bran and skim milk. Press into bottom and sides of pie pan.

3. In mixing bowl, combine pumpkin, Splenda brown sugar, salt, cinnamon, cloves, and ginger. Add eggs and mix well.

4. Gradually add milk and mix.

5. Pour into pie shell. Bake for 15 minutes. Then turn oven down to 350*F and cook for another 45 minutes. Cool completely.
