Dukan Friendly Pumpkin Spoon Bread

 

 

 

 

 

 

 

My husband and I have been on the Dukan diet for a couple of months.  It’s similar to Atkins, but you have to eat leaner proteins.  The diet has worked great for us.  We both have been able to lose a significant amount of weight and we still get to eat.  I am constantly modifying recipes to make them Dukan Diet friendly.

The Dukan diet uses oat bran instead of flour.  It is usually found in the hot cereal aisle.  The Quaker oat bran hot cereal is usually the easiest to find. (Walmart has a different brand.)  To grind it, you can use a coffee grinder.  I use a Ninja.  It works pretty well.  It doesn’t grind as fine as the coffee grinder.

Spoon bread is a southern dish made from cornmeal.  It is similar to a savory pudding.  Corn is not allowed in the first 2 phases of the Dukan diet, so I have substitute

Dukan Friendly Pumpkin Spoon Bread

Ingredients:

1 can pureed pumpkin

2-1/2 cups 1% milk

1/4 cup Splenda brown sugar

1 tsp salt

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves

2 tsp baking powder

1 cup finely ground oat bran

4 eggs, separated

1.  Preheat oven to 350 degrees F.  Spray casserole with non-stick cooking spray.

2.  In large saucepan, bring milk, brown sugar, salt, cinnamon, ginger, and cloves to a low boil over medium heat.  Slowly whisk oat bran into mixture.  While whisking constantly, cook for 5 minutes.  Remove from heat.  Allow to cool slightly.  Stir in pumpkin, egg yolks, and baking powder.

3.  In separate mixing bowl beat egg whites until soft peaks form.  Gently fold into pumpkin mixture.

4.  Spoon batter into prepared dish.  Bake 35 to 40 minutes.  Edges will be firm, the center will be a little soft.

5.  Remove from oven.  Allow to cool about 10 minutes.  Serve warm.
