Thin Crust Pizza

Did I seriously just tag this “Easy Weeknight Meal”?  Yes I did!  This IS an easy pizza recipe.

Pizza is probably the most requested meal in my house.  Everyone loves it.  And I have a family full of pizza snobs.  This thin crust recipe is so easy, it can be made any time.  There are no special ingredients, no yeast, no rising time, and you don’t have to let it rest in the fridge for 24 hours.  I hate it when I find that perfect recipe and I read the instructions and realize I should have started planning earlier in the week (see every New York Style Pizza recipe on Pinterest).

The recipe makes one medium size pizza.  It’s easy to make multiples.  No magic calculations are needed, just double it, triple it, or make however many you want.  Last night I made four.  We just line them up on the counter and keep throwing them in the oven as soon as opens up.

The crust recipe calls for honey.  You can replace that with another liquid sweetener.  I have used maple syrup and corn syrup with good results.  Whole wheat flour works great, too.  A little bit more water is usually needed, though.

We also always shred our own cheese.  I find that it tastes and melts so much better, and it is definitely less expensive.

 

 

 

Oh, to be a teenager again!  I wish I could get away with eating that much pizza!  This is my daughter’s first plate and the reason I had to make four pizzas last night.

Did you believe that?  Cause I’m pretty sure we all ate at least that much.

 

 

We make vegan versions of this pizza all of the time.  We just replace the honey in the crust with maple syrup or corn syrup and use vegan mozzarella for the cheese.

  1. Place pizza stone in oven.
  2. Preheat oven to 450 degrees.
  3. In a large mixing bowl, whisk together flour, salt, and baking powder.
  4. In a small mixing bowl, whisk together water, honey, and olive oil.
  5. Stir liquid ingredients into flour mixture. Combine thoroughly.
  6. Shape dough into ball, cover with towel, and let it rest for 10 minutes.
  7. Tear off sheet of parchment paper that is a little bigger than a medium size pizza. Dust with flour.
  8. Place dough on parchment paper. Dust with flour.
  9. Roll dough out until paper thin.
  10. Add toppings of choice.
  11. Slide a cookie sheet or pizza peel under parchment paper.
  12. Carefully slide pizza with parchment paper onto pizza stone.
  13. Bake for 12 minutes. Crust should be brown around edges.
  14. Slide cookie sheet or pizza peel under parchment paper and remove pizza from oven.
  15. Cool slightly, cut and serve.
