Pumpkin Muffins

Ingredients

  • 1 cup flour
  • 3/4 cup oat bran
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup molasses
  • 1/3 cup butter
  • 2 eggs
  • 1 cup mashed pumpkin
  • 1/3 cup water

Instructions

  1. Preheat oven to 325 degrees F.
  2. In medium bowl whisk together flour, oat bran, cinnamon, baking soda, baking powder and salt. Set aside.
  3. In a large bowl, cream butter and molasses together.
  4. Add eggs, one at a time. Mix well after each.
  5. Add pumpkin and mix well.
  6. Alternate adding dry ingredients with water.
  7. Spoon into buttered muffin tins.
  8. Bake at 325 degrees for 30 minutes, or until toothpick comes out clean.
